Spicy Mayo Baked Cauliflower

    Cauliflower is a beautiful vegetable. I saw this incredible idea online using cauliflower and I had to try it! Keeping the cauliflower whole, I was able to create an incredible centerpiece for dinner!

    To make this spicy baked cauliflower, I started by removing the leaves from a medium sized cauliflower and cutting the steam so that it would sit flat. I washed the cauliflower and put it into a medium sized pot with about an inch of water. Bring the water to a boil and preheat the oven to 425 degrees Fahrenheit. Once boiling, cover the pot and steam for about 10 minutes (I would suggest 12-15). While that is steaming, whisk together ⅓ cup mayo, 1 tsp sriracha, 1-2 minced cloves garlic, 3 tbsp grated parmesan, 1 tbsp pesto (I used basil, pine nut pesto, but it is optional), and season with salt and pepper. Remove the cauliflower from the pot and place on a baking sheet lined with parchment. Spread the sauce all over the cauliflower and bake for about 20 minutes.

The only thing that I do not like about keeping the head of cauliflower whole is that the flavor does not get down into the middle of the cauliflower. The bites along the edges with the sauce were really incredible, but the middle proved to be boring. Instead of keeping the head of cauliflower whole, next time I think that I will make cauliflower steaks or cauliflower wedges so that I can distribute the sauce over more surface area of the cauliflower.
