Sesame Soba Noodle Salad
The brilliant thing about soba noodles is that they are versatile and easy to make. I love how the noodles can be made, tossed with a sauce, and topped with vegetables. This makes super easy lunches!
One day for lunch, I decided to make sesame soba noodle salad (link below). I started by cooking my noodles. While my noodles were cooking, I whisked together soy sauce, sesame oil, rice vinegar, sugar, and black pepper. Then, I added some oil to a skillet over medium heat. I sauteed green onions until they became fragrant. I added in the sauce and cooked for about one minute. I added the drained and rinsed noodles to the sauce. I removed it from the heat, added some more green onions, and garnished with sesame seeds.
I love having a variety of soba noodle dishes on hand for when I am in a rush. This dish is delicious this way or it can be amped up by added shredded carrots (or other diced vegetables).
