Pineapple Upside Down Cake
I have never made pineapple upside down cake and I don’t think I ever even had it. My sister made it for my brother-in-law’s birthday and the pictures that she sent us looked so good. They looked good enough for me to go out the next day and buy the stuff to make it myself! It was such a delicious cake! I enjoyed every bite of it!
The recipe had two parts to it. The first part was a topping and the second part was the cake batter. The topping consisted of melted butter and brown sugar mixed together. That was put into the bottom of a cake tin. Then, I neatly placed in the pineapple slices and maraschino cherries. After that was done, I worked on the cake batter. In a mixer, I creamed together the butter and the sugar. Then, I added an egg and vanilla. I also beat in the sour cream. I followed the sour cream with flour, baking powder, and salt. Lastly, I added some pineapple juice and just stirred until it was all combined. I poured it into the cake tin over the pineapples. I carefully spread it to the edges before baking in the oven until golden.
The only note that I would like to make is that I used parchment paper to line the bottom of the cake tin and I sprayed the whole thing with cooking spray rather than using butter. I think this recipe serves 8 with a nice portion. The cake is sweet, but I think it had the perfect amount of sweetness (afterall, it is a cake, so expect some sweetness). It also looked just beautiful!
