Focaccia (The Bread Worth the Hype)
Jacob came home from work one day with a piece of focaccia that his coworker made. The focaccia was just delicious! I asked and he was so kind to send me his recipe that I had to try it!

The process for focaccia starts like a lot of other recipes. I started by blooming the yeast in some hot water. Then, I combined the bread flour, sugar, salt, extra-virgin olive oil, rest of the water, and the yeast mixture into my stand mixer. Using the dough hook, I kneaded it on medium speed for about 5 minutes. I transferred it to a greased bowl and let it sit for two hours to proof (making sure to fold the dough every half hour). I transferred it to a greased 9x13’’ baking dish and let it sit overnight. The following day, about an hour before baking, I took it out of the fridge. After waiting an hour, I greased the top of the bread, made small dimples in it with my fingers, and topped it with Maldon sea salt (I know, flakey salt!). I let it bake until golden and let it cool before cutting into it.
I was so happy with how the bread turned out! The texture was great and the flakey salt on top was delicious. I would love to make this again and try with different herbs or vegetables for toppings.
