Crispy Broccoli (Battered and Roasted!)
We are going to batter broccoli, roast it, and cover it in a peanut butter based sauce. I know that sounds weird, right? Actually, it is amazing! I never thought that this flavor profile would work together, but it does! I served this crispy broccoli with a ranch dipping sauce. This would be a great entrée or appetizer!

Crispy Broccoli
Serves: 4
Ingredients:
1 head broccoli, cut into similar sized pieces (florets and stalk)
Batter:
1 cup flour
¾ cup water
Salt and pepper
1 cup breadcrumbs
Sauce:
¼ cup peanut butter
½ lime juice
1 tbsp sweetener (if desired)
1 tbsp tomato paste
¾ tsp salt
¾ tsp red pepper flakes
1 tsp curry powder
¼ cup water
¼ cup peanuts, chopped
Directions:
Preheat the oven to 375 degrees Fahrenheit.
In a large bowl, whisk together the flour and water for the batter. Season with a pinch of salt and pepper. Add the breadcrumbs to a separate bowl. Whisk all of the sauce ingredients together in a large bowl.
Dip the broccoli into the flour mixture then into the breadcrumbs and place onto a baking sheet. Once all of the broccoli has been prepared, roast in the oven for about 25-30 minutes.
Remove the broccoli from the oven and toss with sauce. Transfer to a serving dish and sprinkle with chopped peanuts.
