Chili Peanut Udon Noodles

Prepare enough Udon noodles for 2 people. In a bowl, combine 2 tbsp soy sauce, 2 tbsp peanut butter, 1 tbsp sesame oil, 1 tsp chili flakes, 1 tsp brown sugar (optional), 1-2 minced cloves of garlic, ½ tbsp sesame seeds, and ¼ cup of water. In the empty pot after draining the noodles, add the peanut sauce. Whisk the sauce for about 30 seconds. Let simmer for about 20 more seconds. Add the noodles back into the sauce and combine. Serve with chopped peanuts, spring onions, and cilantro.
These noodles were really amazing! I loved the flavor and the ease of preparing this dish. I got my udon noodles from the freezer section at a local Wegmans. I enjoyed this dish, but my husband noted that he thought the noodles were too chewy. The texture of Udon noodles is different from pasta, rice noodles, or soba noodles. I think it is worth giving it a try!
