Butter Tofu

I love using Indian inspired flavors! I just had to try this recipe for creamy butter tofu that I saw on Instagram! The tofu and sauce was just delicious!

I started by cutting my tofu into small cubes, placing it on a paper towel lined dish and draining it. After about 20 minutes, I began marinating the tofu in chili powder, coriander, cumin, garam masala, and chili garlic paste (the original recipe called for ginger garlic paste). While that was marinating, I began sautéing one onion, three minced cloves of garlic, and about a tablespoon of grated fresh ginger. I followed that with two minced tomatoes, cashews, and ½ cup of water. I let the mixture cool before blending it in a food processor. In the empty skillet, I added oil with cinnamon, cardamom pods, and a pinch of cloves. I added back in the sauce I blended along with the tofu, garam masala, cumin, coriander, tomato paste, and brown sugar. I think this was a good recipe, but next time I would soak the cashews ahead of time and replace the water with coconut milk. 

I served the butter tofu with a side of basmati rice, Naan bread, and a steamed vegetable. I thought this was a delicious meal with an incredible combination of flavors!
