Spinach and Feta Wreath
Spinach and feta cheese is an incredible combination. I came across this recipe for a spinach and feta wreath, so I had to try it. I will link the original recipe below!
I started by making the filling and then I made the dough. The filling is very simple. It is made from onion, frozen spinach, rosemary, parmesan cheese, and feta cheese. I diced the onion and began sautéing that over medium heat. While that was sautéing, I defrosted the spinach and squeezed out as much water as I could. I added the spinach and a pinch of salt to the pan and let any remaining water heat off. I removed the pan from the heat and stirred in the rosemary.
Then, I made the dough. The dough in the original recipe is meant to be more of like a biscuit rather than a bread. It does not use any yeast. It is very soft and sticky dough. I ended up adding about a bit more flour than the recipe suggested to hold my dough together. I rolled out the dough, covered it in the filling, added the cheese, and began to shape it. I shaped it right on the prepared baking sheet so that it could go right into the oven. I brushed it with oil and added sesame seeds.
This spinach and feta wreath was delicious! Jacob and I shared some of it for a couple breakfasts.
