Peanut Butter and Jelly Baked Oats
Peanut butter and jelly is one of my all-time favorite flavor combinations. It screams goodness! Peanut butter and jelly is the kind of flavor that takes me back to childhood lunches or field trip days where I took a lunch with me. Anyway, I wanted to level up this basic flavor combination into a baked oatmeal. I will link below the original recipe!
Peanut Butter and Jelly Baked Oats
Serves: 4
Ingredients:
2 cups frozen berries (I used a combination of raspberries and blueberries)
2 eggs
½ cup peanut butter
¼ cup maple syrup
¼ cup whole milk (almond milk works too)
1 tsp vanilla
1 tsp baking powder
1 tsp cinnamon
¼ tsp salt
2 cups old fashioned oats
Directions:
Preheat the oven to 375 degrees Fahrenheit. Lightly grease an 8x8’’ cooking dish with cooking spray. Place the frozen berries in the greased dish in one layer.
In a large bowl, whisk together the eggs, peanut butter, maple syrup, whole milk, and vanilla. In a separate bowl, combine the baking powder, cinnamon, salt, and oats. Stir the oat mixture into the liquid. Add the oat mixture on top of the frozen berries in an even layer.
Place in the oven and bake for about 30 minutes (looking for the berries to be bubbling at the sides and the oat mixture to be set). Enjoy!
