Lemon Snow Peas (From The Complete Plant Based Cookbook by America’s Test Kitchen)

I think there should be one (at least) vegetable side with dinner. The one night, I was making a pasta dish and wanted to pair something with it. I found the recipe for these lemon snow peas and knew I had to give it a try!

I started by preparing all of my ingredients. This included combining oil, minced shallot, and lemon zest together in one bowl. I also combined salt, pepper, and sugar in another bowl. I prepared my snow peas by washing them and removing the strings. Once I had all of that ready, I began heating oil in a non-stick pan. I put in my snow peas and the salt mixture. I let it cook while taking breaks between stirring. Before they finished cooking, I added in the shallot mixture and let that cook. I stirred it all together and topped with dried parsley (recipe did call for fresh, but I did not have any). I squeezed on some lemon juice and served.

I really enjoyed this dish! I think this is a great side dish to any lunch or dinner. I think the shallot and lemon complete the snow peas well. The snow peas had the perfect texture and flavor!
