Lemon Ricotta Cookies
I am sure that you are already aware that I love lemon! I love lemon flavored everything! I was trying to figure out what to do with my leftover ricotta in the fridge when I came across this recipe to make lemon ricotta cookies! These cookies were amazing and I will be making these again!
This is one of Giada De Laurentiis’ recipes. These cookies were made from flour, baking powder, salt, butter, sugar, eggs, ricotta, lemon juice, and lemon zest. The cookies also had a lemon glaze which was made from powdered sugar, lemon juice, and lemon zest. I started by creaming together the butter and sugar in my mixture to make the cookies. Once the sugar and butter was light and fluffy, I added the eggs. I beat in the ricotta cheese, lemon juice, and lemon zest. Then, I stirred in the dry ingredients. I spooned some of the cookies onto a baking tray and baked them into the oven until they were slightly golden on the edges. I let the cookies cool before adding the glaze.
The only note that I would like to share is that I did not wait long enough for the glaze to harden before putting them into containers. I was in a hurry to go to bed, so I stacked the cookies together. I could tell the next morning that the glaze wasn’t all the way set because some of the cookies on top of the glaze stayed behind when I pulled them apart. I would recommend a couple hours of the cookies drying. Other than that, these cookies were just perfect! They had the right amount of sweetness and lemon flavor!
