Fire Chickpea Meatless Meatballs

I follow this individual Max who often posts vegan recipes. I love the way all of his recipes look in his videos, so I decided it was time to start testing a few out!

Basically, I combined chickpeas, cooked couscous, red onion, garlic, paprika, parsley, soy sauce, salt, and pepper in a food processor. I pulsed the mixture a few times to help it come together. It is very important not to over pulse the mixture because then the meatballs will be thick and pasty in the center. I baked these in the oven. While these were baking, I made the fire sauce by combining hot sauce, soy sauce, brown sugar, cornstarch, and water together in a pan. I placed the meatless meatballs in the sauce and turned to coat them. I sprinkled the whole dish with parsley and served.

I think the sauce was slightly too thick and there was not enough of it. I doubled it when I made it, but I feel like I could easily triple it to get a better coverage on the chickpea meatless meatballs. I think next time I make this that I would also use slightly less cornstarch so that it helps to thicken the sauce, but not too much. I may not even use any at all. I really did love the flavor of the sauce so the only problems were thickness and that it made too little.

These were the best meatless meatballs that I ever made. I tried a few different ones, but they have not turned out anything like I would have liked. I did like the taste and texture of these chickpea meatballs. I would make this again! Next time, I would serve them on a roll. I think that would be so good!
