Cold Citrus Noodles (From Thug Kitchen Cookbook)
Soba noodles with veggies and a simple dressing are one of my favorite dishes to prepare for lunches. I typically take some time on Sunday to sort out what lunches that I am eating in the week ahead. I like to have variation in my choices so that I don’t become sick of the food or tired of eating the same vegetables. I tend to stick around the same basics, like using soba noodles, but I try to vary what I pair them with.
This soba noodle salad was paired with cut up carrots, cucumbers, spring onions, and sprinkled with toasted sesame seeds. The dressing was made from rice vinegar, water, orange juice, toasted sesame oil, ginger, soy sauce, and lemon juice. I whisked together the dressing first. After the soba noodles were cooked, drained, and rinsed, I tossed them together with the dressing along with the vegetables.
I found this recipe in the Thug Kitchen Cookbook. This cookbook has a lot of great recipes that range from simple to more complex. There are recipes with only a few ingredients and there are recipes with a lot of ingredients. The whole cookbook is vegan and it simplifies vegan meals without compromising on taste. This is the first recipe that I made from this cookbook, but I am looking forward to doing a lot more!
