Broccoli Soup with Rice Noodles and Baked Tofu
I found this recipe for vegan broccoli soup on Instagram and it just looked so good that I had to try it! @maxlamanna is the username for Max who shares vegan, low-waste recipes. His recipe for broccoli soup is so good!
I sautéed one onion in a pan over medium heat. Once those were soft, I added garlic and ginger. I let those become fragrant before adding in fresh broccoli florets and the stems. I added water and coconut milk. I brought the soup to a simmer and let cook until the broccoli was tender. I removed it from the heat and used an immersion blender to blend the soup. I also added in some miso paste and blended that into the soup.
To top the soup, Max recommended noodles and baked tofu. Jacob helped me with the baked tofu. He drained the tofu and diced it into cubes. He drizzled the tofu with oil and then coated with cornstarch. He seasoned with salt and pepper. Tofu can be seasoned with anything. I think the addition of a little paprika would have been nice! I soaked some rice noodles in hot water until they were tender so I could add on top of my broccoli soup.
I scooped the soup into bowls and added my topping. I placed some cooked rice noodles on top, some baked tofu, and some lime juice. The lime juice is necessary in this dish. It adds some brightness and acidity that is welcome in this broccoli soup. I would love to make this again!
