Tabbouleh Grain Bowl
I was very busy over the past weekend. I knew I needed at least a couple lunches for the week, so I started looking in my kitchen. I came across this mix for “tabbouleh.” This package came with the bulgur and spices, so all I had to do was mix it with boiling water. Once it was mixed, I had to cool it in the fridge. Once cooled, I split the mix in four containers over a bed of chopped spinach. I added some diced tomatoes, diced bell pepper, cucumber, and feta. I also drizzled a bit of olive oil and lemon juice.
I was so glad to have found this easy mix to facilitate my lunch preparation. There is nothing wrong with using something easy to aid in meal preparation. There are a lot of really great products that only require heating up in the microwave or boiling water and it created a cooked grain in just a few minutes. I like to keep at least one of these products on hand. Typically, it is a grain with spices or a mix of grains. This makes it easy when I am in a rush, but I still want something healthy.
