Roasted Mushrooms With Garlic Butter Served Over Polenta
I love mushrooms! Roasted mushrooms are such a delicious food. I decided to take this idea that I found in a Food Network magazine that was supposed to be a side and make it the main entree. I am so happy with how delicious this meal was! I highly recommend you try it!
Slice two pounds of mushrooms and place them in a large bowl. Toss the mushrooms with salt, pepper, and oil. Transfer the mushrooms to a baking sheet in an even layer and roast for about 15 minutes at 425 degrees Fahrenheit. While those are roasting, prepare the garlic butter by placing two tablespoons butter in a small saucepan on the stove with about 6 small cloves of garlic and ½ tsp paprika. Also, cook 1 cup of instant polenta. Once the mushrooms are done, place them in a large bowl (leaving any of the water the mushrooms released behind) and cover in the garlic butter. Divide the polenta into four bowls and add the mushrooms to the top. Garnish with parsley and enjoy!
