Lemon Poppy Seed Scones with Lemon Curd Filling
I love trying out recipes from magazines! Nothing is better than finding a cool recipe while reading a magazine and watching it come to life. I found a recipe for lemon poppy seed scones with lemon curd filling in the Food Network magazine.
These scones are centered around a simple dough made from milk, poppy seeds, lemon juice, lemon zest, cake flour, sugar, baking powder, Earl Grey tea leaves (I omitted these), salt, butter, and egg. Once the dough is made, I split it in half. I flattened both halves into a 7 inch circle. I filled the center of one of the disks with ¼ homemade lemon curd. I set the second disk on top of the first one and pinched the edges together. I scored the top of the scones and put them in the oven to bake.
I was happy with how the scones turned out, but not as impressed as I wanted to be. I thought the scones were slightly dry and did not have enough lemon flavor in them. I also thought that there should be more lemon filling. I noticed that some of the lemon curd seeped into the dough rather than staying in the middle (I wonder if I did something wrong). I am glad that I tried this recipe, but I think I would like to modify it until I get a result that I am happy with.
