Lemon Curd

I have made lemon curd in the past and I wanted to try a different recipe. I chose the recipe from Simple Recipes on how to make lemon curd (linked below). I decided to halve the original recipe so I could have just enough for my lemon poppy seed scones. I only needed a ¼ cup of lemon curd for the scones, so I thought half of the original recipe linked below would be perfect.

The recipe only called for a few ingredients. I needed eggs, sugar, lemon juice, lemon zest, and butter. I measured everything out beforehand and prepared my work space. I set out a bowl with a fine mesh strainer on my counter with a rubber spatula. I set a pot on the stove and grabbed out a whisk. I combined the ingredients in stages until the last bits of butter were melted and the curd thickened.

One thing to note with this recipe is that it calls for constant attention and it is necessary. This recipe calls for cooking eggs with sugar on a pot over medium heat. It is quite easy to scramble the eggs if the pot is too hot or the eggs sit on the bottom too long. I made sure to take my time and my eyes did not leave the stove. The curd came together beautifully for me! I love the taste!
