Crispy Breaded Tofu Sticks (Bread crumb and coconut breading)

I love tofu! I feel that statement is a bit controversial, but I am a firm believer that tofu is just delicious. I was inspired by a recipe that I found in a Food Network Magazine to make breaded tofu sticks. I totally recommend trying these!

I started by cutting my tofu into sticks and lining them on paper towels to drain. I let them drain for about 20 minutes. In the meantime, I prepared everything else for these sticks. I set up a workstation so I would be dipping into flour (about ¼ cup), beaten egg (1 egg), and a mixture of bread crumb and shredded coconut (about ½ cup breadcrumb and ¼ cup coconut). My husband worked on a sweet chili dipping sauce for these sticks. Once the tofu was drained, I seasoned them with salt and pepper. Then, I started coating them in the flour, the egg, and the breading. I lined them on a prepared baking sheet (foil and cooking spray) and placed them in a preheated oven of 400 degrees Fahrenheit for about 30 minutes rotating halfway through. 

I served this as the main dish with the sweet chili dipping sauce. I also served these with some roasted parmesan green beans and a side of asparagus risotto. I made enough to serve my husband and I for dinner and to be able to take lunch to work the next day. I really enjoyed everything about this meal. To me, it felt balanced and I felt satisfied after eating!
