Creamy Tomato and Bacon Gnocchi

My husband made me dinner! It made me feel so special! I normally cook and he normally helps with the dishes, so we switched rolls! I think this is a great idea for date night and one that I am going to take more advantage of. 

Anyway, let’s talk about what he made. He chose a simple recipe to make and it turned out delicious! He picked a creamy tomato and bacon gnocchi dish to make. The recipe called for diced tomatoes, heavy cream, bacon, garlic, and gnocchi. These pictures do not do the dish justice! I cannot get over how good it was! We paired the gnocchi with some steamed broccoli for a great dinner. 



Creamy Tomato and Bacon Gnocchi

Ingredients:

  • 6 slices bacon

  • 2-4 cloves garlic, minced

  • 1 can diced tomatoes

  • 1 cup heavy whipping cream

  • 2 lb gnocchi

  • Optional garnish of parmesan cheese

Directions:

  1. Start by cooking the bacon in a large pan over medium low heat. Cook until crispy (about 10 minutes). Once it is done cooking, drain most of the bacon fat. Add the garlic to the pan and cook until fragrant (about 1-2 minutes).

  2. While the bacon is cooking, process the diced tomatoes in a blender until smooth. Add in the heavy whipping cream and pulse together until blended (3-4 pulses will do, this is just to mix together. Too much pulsing and the cream will break apart).

  3. Turn the pan up to medium heat and add the sauce. Let simmer until beginning to thicken (about 10 minutes). Add in the gnocchi and cook until tender (about 10 minutes).

  4. Season with salt and pepper to taste if needed. Serve with a garnish of parmesan cheese.
