Cauliflower Quinoa Meatless Meatballs with Coconut Turmeric Sauce

I love how food can take you to all different kinds of places. This dish takes me back a few years to when a friend and I cooked it together. With every bite, I felt the nostalgia growing. I was such a different person and it is crazy to think how much has changed in that time!

This recipe was quite straight forward that you had to make the meatless meatballs and the sauce. Then, you simmer the meatballs in the sauce and serve. The meatless meatballs were composed of cauliflower rice, quinoa, egg, flour, cinnamon, pepper, parsley, oil, and salt. The sauce was made from onion, garlic, ginger, turmeric, salt, pepper, red pepper flakes, coconut milk, vegetable broth, lemon juice, and parsley. I served these beautiful meatless meatballs over rice and made a side of roasted potatoes.

I did make a few mistakes that I would like to share. I used an already pre-made cauliflower rice that was in a pouch. I put it in the microwave (like the directions on the package said) and let it cool. This did create additional moisture that led the meatless meatballs to not hold their shape very well. I also used red quinoa rather than white. I would recommend using white. Red quinoa has a very strong flavor that went against the flavors in this dish. I think if I would have made those two fixes, this dish would have been perfect!
