Caprese Orzo Salad
Mozzarella, basil, and tomatoes are such a delicious combination. This caprese orzo salad takes advantage of this delicious combination! This salad is also very easy and takes just a few minutes to put together.
I started by cooking the orzo so that it could cool before I added the other salad ingredients. While the orzo was cooking, I prepared the dressing, halved cherry tomatoes, chopped basil, and weighed out the necessary amount of mozzarella pearls. The dressing was made from olive oil, balsamic vinegar, honey, garlic powder, salt, and pepper. I drained the orzo and put it in a large bowl. I covered it in the dressing and let it cool. Once it was cool, I added all of the other ingredients. I split this salad between four lunch containers.
One optional thing is a balsamic glaze. I decided to omit it, but the salad would be great with it! This salad also requires fresh basil (dried basil would not work here). Delicious, and easy--I hope you try this for your lunch this week!
