Blueberry Danish

I am always trying to limit my food waste. When I buy a product for one recipe, I try to find multiple uses so that I don’t end up throwing anything out. This time, I was looking for a recipe for mascarpone cheese. It worked out perfectly because this recipe uses both puff pastry and mascarpone cheese. I have been wanting to try making my own puff pastry and I needed to use that cheese, so a blueberry danish was the perfect option!

The danish was very easy to put together and only called for a few ingredients. The filling is made from mascarpone cheese, lemon zest, and sugar. The filling also uses fresh blueberries. I rolled out my puff pastry and spread the cheese mixture along the middle of the pastry. I added blueberries on the top of the cheese mixture. Then, I began cutting the puff pastry to the left and the right of the filling into thin strips. I layered these thin strips to add a design on top before baking it in the oven.

To note, I did not put the danish in the fridge after it was prepared before I put it in the oven. I should have put it back in the fridge to cool the butter in the puff pastry. This step is very important! Remember to cool your pastry before putting it in the oven!
