Baked Feta Pasta with Tomatoes, Red Onion, Bell Pepper, and Garlic

        The baked feta pasta trend was one that came out of nowhere and went away just like any other trend. The difference with this trend was that it was awesome and will always have a place in my heart. The first time I tried to replicate this dish I made it vegan. When I made it this time, I decided to use feta cheese and throw in some other flavors.

I started by adding a container of washed and dried cherry tomatoes into a 9x13’’ baking dish. I chopped one yellow bell pepper and added that to the dish. I also sliced one red onion and peeled six cloves of garlic. I drizzled the vegetables with olive oil and I added salt, pepper, and red pepper flakes. I made a square in the center and added a brick of feta cheese. I baked that in the oven at 400 degrees Fahrenheit for about 40 minutes. The tomatoes had burst and the feta was just starting to brown. While that was in the oven, I cooked 12 ounces of pasta to package directions (save some pasta water). I removed the pan from the oven. I stirred the vegetables and cheese together. Then, I stirred in the cooked and drained pasta. I added about ¼ cup of pasta water. I garnished with fresh basil. I served this with parmesan cheese and additional red pepper flakes.

This dinner was just delicious! I enjoyed every last bite. I will definitely be making this again! I served this pasta with a side of vegetables. It served four (could serve six with an additional side). This dinner was easy to make and I enjoyed it so very much!
