Vegan Mac and Cheese (Simple, and Delicious)

I love making vegan mac and cheese! There is nothing that makes me happier than how potatoes, carrots, and spices get blended up to make a “cheese” sauce. I even tell myself with every bite of the mac and cheese that I am eating vegetables (okay, that may be a little far, but still true!). I also love trying different variations of vegan mac and cheese because the different recipes each bring their unique spin to the dish. This version does not call for any vegan cheese!

I really loved this recipe! I am going to keep this recipe pinned to my favorites because it was so easy and it did not call for any vegan cheese. I have nothing against vegan cheese, but there are quite a few vegan cheeses that I do not like. There are some delicious vegan cheeses! In my opinion, there are also some not so delicious vegan cheeses. I prefer to steer away from recipes that call from vegan cheese, but I do not mind trying them at all.

This recipe is delicious and calls for only a little bit of cooking. I started by chopping one medium/large peeled potato and two small carrots. I boiled them on the stove until they were tender. I also brought a pot of water to a boil for my macaroni. While that was cooking, I decided to saute one small onion and four small minced cloves of garlic. You can choose not to saute the onion and garlic. In a food processor, I combined coconut milk, vegetable broth, soaked raw cashews, cooked/cooled carrots and potatoes, nutritional yeast, flour, lemon juice, salt, pepper, and onion powder. I processed it together until it was smooth. I drained the pasta and put the sauce into the pasta pot. I cooked it for a couple minutes before adding the pasta back in.

My husband, Jacob, made a quick topping to throw on top. He heated some oil in a pan and tossed breadcrumbs with it until it was toasty. He added some parsley to the breadcrumb and topped the individual dishes. We also added a little extra parsley (because parsley is amazing!).
