Thin Crust Pizza with Tomatoes and Broccoli (From The Complete Plant Based Cookbook by America’s Test Kitchen)
Pizza can be described as the food that you need in your life the most. Pizza must have a good crust with a crispy bottom. The sauce and toppings must be brought together with sheer perfection. Okay, enough of that. We can all agree that pizza is one of the best foods on the planet, so let’s get into this one.
I made a simple pizza dough that I rested in the fridge for 24 hours before using. The dough is made from flour, yeast, salt, olive oil, and cold water. I also made a simple sauce that was composed of canned tomatoes, oil, garlic, salt, pepper, red wine vinegar, and oregano. I pureed it all together in a food processor and set it to the side while I worked on my toppings. I made a garlicky broccoli with sun-dried tomatoes as my topping. When it came out of the oven, I drizzled it with olive oil, added toasted pine nuts, and red pepper flakes. The pine nuts are a great addition!
This recipe did mention how it is optional to add cheese. Vegan cheese or cheese made from dairy would both go well with this recipe. I decided to omit the cheese because I want to be able to find pizza alternatives that are delicious being made from just vegetables. That may sound silly, but I like being able to make pizza with and without cheese and it is delicious. There are certain pizzas that I love with cheese and there are some that are just delicious without any cheese at all.
I would highly recommend this recipe because it is easy to make and makes a delicious pizza!
