Thai Pasta Salad (With Peanut Sauce)

I love a good, simple pasta salad that is packed with flavor. It is a great option to make ahead for lunches to have during the week. This Thai pasta salad is just that. It is simple, quick to come together, and has a lot of flavor. I will link the original recipe down below!

This recipe calls for a simple peanut sauce, chickpea pasta, and a handful of veggies. The peanut sauce is composed of peanut butter, maple syrup, rice vinegar, orange juice, sriracha, liquid aminos, and garlic. The veggies are one cup of chopped cabbage, 4 scallions, 1 cup chopped cucumber, and 1 cup shredded carrots.

I liked this pasta salad, but I did not love it. I think it is because I have made better peanut sauces before and loved them. I really prefer a slightly spicy peanut sauce whereas this one was mostly just a peanut flavor. I also was not impressed with the pasta that I chose. I decided to use Wegmans organic chickpea pasta. This was my first time trying this pasta, so I think I need to get used to the flavor and texture, but it was not impressive this first time. It could also have not been the right dish to use this pasta in.

Notes for next time: I think this would have been better with my spicy peanut sauce.
