Sushi Bowl with Dynamite Sauce (Vegan)
Bowls are super fun to make! I love having a lot of options to pick and choose from to be able to customize my owl meal. Making a bowl gives you the option to choose which ingredients that you want to have and the quantity of those ingredients. Jacob and I love making sushi bowls! They are delicious and full of veggies. I love adding crispy tofu to the bowls and drizzling them with a sauce. This time we went with a “dynamite” sauce. The great thing about this is that you can change anything you want to! If you had different veggies in the fridge or wanted to add fish into the bowl, be my guest. Have fun being creative!
Sushi Bowl with Dynamite Sauce
Serves: 2
Ingredients:
½ cup rice (I used basmati)
½ brick tofu
Cornstarch
Salt
Pepper
1-2 tbsp oil
Sauce
¼ cup tahini
¼ cup water
Juice of ½ lemon
2-4 tsp sriracha
Pinch salt
Optional: vegan mayo*
1 shredded carrot
½ cucumber diced small
2 radishes, thinly sliced
Optional
Avocado
Pickled ginger
Sesame seeds (I love sesame seeds)
Nori sheet (I used half a nori sheet and cut it into small pieces)
Directions:
Cook the rice per the package directions.
Cut tofu into small cubes. Lay on paper towels and let drain for at least 10 minutes. Once drained, place in a bowl and cover with a dusting of cornstarch, salt, and pepper. Toss together. Add more cornstarch if need be (you want the cubes coated).
Heat oil in a non-stick skillet over medium heat. Fry the tofu on all sides until golden and crispy--can take from 10-15 minutes. Remove from the pan and lay on a paper towel lined plate. Sprinkle with more salt.
Whisk all sauce ingredients together.
Prepare veggies.
Assemble the bowl--split the rice between two bowls. Top with veggies, tofu, and optional ingredients. Drizzle with sauce. Enjoy!
*The vegan mayo helps with the consistency and the taste. It helps to cut through the bitterness of the tahini. I added a few tablespoons to our dressing.
