Roasted Asparagus with Garlic and Lemon

Sides are equally as important as the main dish. Sides are like the supporting characters in a TV show. Everyone falls in love with the main character and the supporting characters. I was walking through the grocery store and I saw that asparagus was one sale, so I picked some up to have as a side this week to a couple of the dinners I was planning to make.  I decided to make this roasted asparagus to have with a pasta dish and I just loved it! This asparagus had the right amount of seasoning and the right amount of lemon.

This recipe was super easy! I started by washing 1 lb of asparagus, drying it, and chopping off the ends. I added about 1 ½ tbsp of olive oil to a bowl. I added ½ tsp salt, ¼ tsp pepper, and 3-4 minced cloves of garlic. I brushed this mixture onto the asparagus and made sure to drizzle any leftover flavored oil on top. I put this in the oven at 400 degrees Fahrenheit for about 12 minutes (11-15 minutes depending on how tender you want the asparagus). When it came out of the oven, I topped the asparagus with half a lemon zest and juice.

I would highly recommend this recipe! I love how the lemon really makes the asparagus have this nice bright taste without being too acidic. The garlic also helps add a lot of flavor to the asparagus--I may be biased because I love garlic!

Taste: 10/10

Notes for next time: This was a great recipe!
