Reel: Sweet and Sour Chili Garlic Noodles
Another rice noodle dish? Yes, please! Rice noodles are so delicious, versatile, and easy to make! This recipe came together in a matter of minutes. I started by soaking my rice noodles (8 ounces) in very hot tap water (this takes about 20 minutes). Then, I minced four cloves of garlic. Lastly, I prepared the sauce by mixing together 2 tbsp soy sauce, 2 tbsp sweet chili sauce, 1 tsp sriracha, and 1 tbsp lime juice. Once the noodles were tender, I drained them and set them to the side. In a non-stick pan with 1 tbsp hot oil, I sauteed the garlic until just beginning to brown over medium heat (about 1-2 minutes). I added in my sauce and let cook for about 2 minutes until it just starts to thicken. I tossed in my rice noodles. I topped with more sriracha, sesame seeds, and green onions.
Just a reminder to remember to always read the labels of products if you have a dietary restriction. I just grabbed the sweet and sour sauce that I had on hand without realizing that there was fish sauce in it.
