Mini Chocolate cakes with Whipped Cream Filling, Chocolate Buttercream, and a Chocolate Ganache

I know that these mini cakes do not look like the most beautiful cake you have ever seen, but I do know that these cakes tasted just delicious! They were a little stressful to put together, but I would love to try again to test out some new techniques.

To start, I made my favorite chocolate cake (really, I am obsessed with this recipe!). Then, I made a stabilized whipped cream filling. Basically, this was a whipped cream with some gelatine in it. I need some more practice with this. I wasn’t very happy with how it turned out. I also made a simple chocolate buttercream. I waited until the last second to make my water chocolate ganache. To layer the cakes, I started with a piece of chocolate cake. I topped that with the stabilized whipped cream frosting and added chopped strawberries. I added another cake layer on top. I covered the whole cake with chocolate buttercream. Once I was ready, I made a thin layer of the ganache on top. I made a little decoration with some of the whipped cream filling and some strawberries. I did take the time to refrigerate in between each step because I was having some issues with the cakes.

I am quite new to this baking realm, but it is just so exciting! Even if it isn’t perfect, it is fun to put together and always (most of the time) delicious!
