Mediterranean Inspired Lunch bowls
I love having “bowl” ideas for lunch and I came across this idea to make one inspired by Mediterranean food! I love the idea of Mediterranean food and I know I have so much to learn. For convenience, I did use a store bought hummus and tzatziki, but these are both things that I would love to perfect on my own.
I used a base of red quinoa that I cooked in vegetable broth. I topped that with some chickpeas and lots of veggies. I used tomato, cucumber, sweet red pepper (like the small ones), green onion, and parsley. My husband added olives to his. We also added a dollop of hummus and some tzatziki. I finished the bowl with a drizzle of extra virgin olive oil.
I decided to make this dish vegetarian, but you can easily make it vegan or include meat into it. I think this would be great with a vegan tzatziki. Falafel would also be a great addition to make the bowl more hearty. I think a simple grilled chicken or kebab would be great on this as well! A yogurt dressing or other types of dressings would be welcome too!
