Drunken Noodles (Vegan, rice noodle dish)
As you know, I am obsessed with rice noodles. I love using them! They are so delicious. I have been seeing a lot of recipes about drunken noodles, so I thought it was about time that I made them! I will link below the recipe that I used.
I decided to double the recipe, so I used a whole package of rice noodles instead of just half. I wanted to be able to have two nights worth of dinner for my husband and I. Before I even started cooking, I began soaking my rice noodles in hot water and preparing all of my veggies. I minced garlic, ginger, chili, onion, red pepper, and prepared the basil. I also made the sauce which was composed of soy sauce, oyster sauce, sugar, and water. Once the noodles were almost done soaking, I started to cook my vegetables. I started with the garlic and chili. Then, I added the ginger, onion, and pepper. Once the vegetables were cooked, I added in the noodles, followed by the sauce and basil leaves. While that was cooking, I prepared my two garnishes of green onion and chopped peanuts.
These are best served immediately. The texture of the noodles that sat overnight was not as good as the first meal, but I am glad I made enough to have two days in a row for dinner. This came together quickly and was ready in under 30 minutes. It would be ready faster if you boiled the rice noodles rather than soaked them. I really loved the taste of the drunken sauce! The only change that I would make is that I would make more sauce. I doubled all of the ingredients of the original recipe. I should have 4x the sauce. Other than that, these noodles are delicious!
