Dill Potato Salad
I bought fresh dill for a recipe I was making and I had a bunch of it leftover. I try to limit my food waste as much as possible. Since I knew I had leftover dill, I decided to make something with that dill so that it wouldn’t go bad and I wouldn’t have to throw it out. I came across this idea for a dill potato salad and decided to give it a try! The best part about it was that I already had everything in my house to make it, so I just had to throw it together.
I started by washing, dicing, and boiling my potatoes until tender. While they were cooking, I finely diced an onion and added it to some warm water, white wine vinegar, and salt. Once the potatoes were cool, I added in the onion mixture, dill, salt, and pepper to taste. It is super simple and I will link to the original recipe below. I replaced the shallot with one red onion.
I think this is a great side, appetizer, or even main with some vegetables on the side. I am going to be using this as a side to my lunches. I love how it is a cold salad, so it will save some time not having to be reheated!
