“Crack” Broccoli Tacos (Vegan!)

I love tacos! I think it is so fun to eat different kinds of tacos and change the fillings every time you eat them. Jacob came across this recipe for using broccoli as the main ingredient for a taco. We made them for dinner one night and I am so very glad that we did! These tacos are amazing!

We started by coating the broccoli florets with almond milk and apple cider vinegar. Then, we covered them in flour seasoned with salt and pepper. They went back in the almond milk mixture and then into breadcrumbs. We baked them in the oven until the breadcrumbs were golden and the broccoli was cooked. While that was baking, we threw together a sauce by heating up some barbeque sauce with brown sugar, garlic powder, and lime juice. I also made a cilantro sauce to dress the tacos with.

When it was time to assemble, we heated our corn tortillas. I started by adding some coleslaw mix, tomatoes, and cilantro sauce. I put in a couple broccoli florets. I also topped the tacos with green onion, diced jalapeno, hot sauce, cilantro, and lime wedges. I loved the flavor and texture of the coleslaw mix with these tacos (I would recommend this!). You can put whatever toppings that you want. If you wanted cheese/sour cream, that would be great on these. The best part about tacos is that you can assemble your own just the way that you like them!
