Baked Coconut Rice (From The Complete Plant Based Cookbook by America’s Test Kitchen)

I have never tried baking rice. I knew that it was a technique to cook rice, but I just never tried it. I was looking through The Complete Plant Based Cookbook by America’s Test Kitchen and I saw that they recommended pairing the chickpea curry with baked coconut rice, so I decided to give it a try.

The whole idea of baking rice is very simple. I heated up coconut milk, cardamom, and water. I dumped the heated liquid over rinsed rice that I put in a 9’’x9’’ pan. I covered the pan in foil and put it in the oven to bake for about 25 minutes. 

I was very happy with the way this rice turned out! It was cooked really well! I thought this method was very easy! The coconut flavor was not very present, but the rice had a great texture because of the coconut milk. The cardamom added a great flavor and the fresh cilantro added after the oven was a needed freshness.
