Reel: Shakshuka

Good morning and happy Sunday! It is time to get out of bed and make yourself an incredible breakfast! This shakshuka is a delicious and easy breakfast that is made with common pantry staples! 



Shakshuka

Ingredients:

  • 1 onion, finely diced

  • ½ red bell pepper, diced small

  • 2 cloves garlic, minced

  • 1 tsp salt +more to taste

  • 1 tsp cumin

  • ½ tsp pepper

  • ½ tsp paprika

  • ¼ tsp coriander

  • Pinch cayenne (I used ¼ tsp to make it spicy)

  • 1 can diced tomatoes

  • 1 can fire roasted tomatoes

  • 4-6 Eggs

  • Parsley (optional)

  • Bread (optional)

Directions:

  1. Saute onion and bell pepper in a skillet with oil over medium heat. 

  2. Once the onion is soft (about 5 minutes), add garlic, salt, cumin, pepper, paprika, coriander, and cayenne.

  3. After 30 seconds, add in diced tomatoes and fire roasted diced tomatoes (need a total of 28 oz diced tomatoes). Let simmer for 10 minutes. Check seasonings and adjust to taste (I added just a bit more salt).

  4. Turn down heat to medium low. Make small wells and add in eggs (I did 4), spoon some sauce on top of the whites. Cover and cook--start checking after 5 minutes (can take longer). Remove from heat when eggs are cooked to your liking --eggs will continue to cook after being removed from the heat. 

  5. Sprinkle with chopped parsley. Serve with bread! Enjoy
