Ginger-Sesame Soba Noodle Salad (From: Food is the Solution)

My obsession with soba noodles just continues to grow! I came across this cookbook called Food is the Solution and I was super excited to see the recipes that it included. This book takes a sustainable approach to cooking to provide recipes that have sustainable solutions. Basically, the idea is that what we are eating is influencing the environment and we want to influence it as little as possible. Anyway, the recipe that I chose to make was the ginger-sesame soba noodle salad.

I started by making a simple dressing with sesame oil, garlic, ginger, soy sauce, maple syrup, and rice wine vinegar. I prepared the frozen edamame by boiling it in water for a few minutes. I took out the edamame and added in the soba noodles to cook. While the soba noodles were cooking, I prepared my carrots and bell pepper. I rinsed the soba noodles in cold water and tossed everything together. I topped with sesame seeds and cilantro.

This soba noodle dish was just delicious! I prepared this ahead of time so I could have a few lunches already in the fridge. This is also a great option for those who want a healthy lunch, but do not have access to heat up their lunch or prefer a cold lunch. This salad was great right out of the fridge! I also loved how simple the dish was to make and prepare. It called for a handful of ingredients, but all of those things I had on hand. I was able to make it in under 15 minutes. It made four servings, which I think is a perfect amount--two lunches for my husband and two lunches for me!

Notes for next time: This is a good option to meal prep--it did keep well in the fridge for a few days!
