Cranberry Orange Bread with Glaze

I feel like December/winter is the time for cranberry orange flavored baked goods. I had this idea to make cranberry scones with orange glaze and they turned out really well. I had cranberries left over, so I figured I would turn that into a breakfast bread for my husband and myself. I will include the original recipe link down below!

I started by preheating the oven to 350 degrees fahrenheit and lightly coating a loaf pan with cooking spray. I also lined the pan with parchment paper and greased that. I wanted to use parchment paper so I could easily remove the loaf from the pan. In a bowl, I combined orange juice, orange zest, oil, and egg. In another bowl, I combined flour, sugar, baking powder, and salt. I added the wet ingredients to the dry ingredients and stirred until they were just combined--do not over mix. Lastly, I stirred in the cranberries after coating them with flour. I put the loaf in the oven for about an hour. I let it cool in the pan for about 10 minutes and transferred it to a wire rack to cool some more before adding the glaze. The glaze was a simple mixture or orange juice, zest, vanilla extract, and powdered sugar.

This was delicious bread! I enjoyed it for a few mornings with some tea and some fruit. I really enjoyed how the orange flavor shined through! I do have to admit that I think I liked my scones better than the bread (I have been obsessed with scones this year!).
