Big Mac Salad (Veganized! Or not, that is totally up to you!)

I am not the biggest fan of salads. I don’t love them, so when I eat a salad it has to be good. I came across this idea of a big mac salad and had to try it! The original recipe calls for ground beef and cheddar cheese. I decided to “veganize” this salad, so I will include those notes here.

I followed everything from the original recipe with the following exceptions. Instead of using beef, I used vegan beef crumbles. I decided to omit the cheese (you can use vegan cheese--I just didn’t have any at home). I also replaced the mayo with vegan mayo. The last change that I made was that I omitted the monk fruit and replaced it with a tablespoon of sugar.

This recipe made four meals with leftover lettuce. I grabbed some meal prep containers and started laying it all in. I layered shredded lettuce, followed by the cooled “beef” crumbles, pickles, onions, big mac sauce, and sesame seeds. I think this salad would be great with the addition of tomatoes. This is a delicious recipe! It takes a new turn on a salad and it is sure to keep your lunch interesting!
