Scalloped Potatoes with Ham
I don’t know about you, but I love leftovers. I think it is great to be able to walk to your fridge, pull some food out, heat it up, and be eating within just a couple minutes of entering your kitchen. I understand that not everybody liked eating leftover for multiple days in a row (I know I sure don’t!). It is important to be a bit creative with the leftovers so that the food does not start to bore you. Over the holidays, I made ham for my husband and I. This proved to be more than we expected, but we decided to be quite creative with the leftovers. Jacob and I decided to use a portion of the ham to make scalloped potatoes.
We came across this recipe for scalloped potatoes with ham on Delish.Com. Overall, it was a good recipe, but I felt it was lacking in a couple of areas. First, the recipe called to make a sauce from shallot, garlic, and milk. I decided to saute one onion in butter with the garlic for a few minutes. I added thyme, salt, and pepper, and as soon as the thyme became fragrant I added half and half (I did not have milk on hand). I let the sauce simmer gently for about 12 minutes. I felt that the recipe should have made more sauce and called for the onions to be sauteed. I also thought that the recipe for the sauce should have called for some cheese to be melted into it.
I think the recipe could have also improved with the directions for seasoning. The recipe only called for salt and pepper in one layer of the scalloped potatoes. I think each layer of potatoes should have been lightly seasoned as to make sure that none of the potatoes went without seasoning. I did add more seasoning than the recipe suggested and a little bit when I was serving the potatoes. I was glad that I added the extra seasoning.
I am glad I made this recipe because it was good and it helped me to learn a few more things about constructing a dish of scalloped potatoes.
