Perogies
I love getting together with my family to do cooking projects. This time we chose to make perogies. Perogies are similar to a ravioli. They have a soft dough that is filled with whatever filling you want--typically, sauerkraut or farmer’s cheese or potato and cheese. We decided to try something different this time.
We prepared the dough that we always do and then we got to work on the fillings. We made two types of fillings. One was made of sauteed banana peppers, onions, and cheddar cheese. The other filling was made from ricotta cheese and a bit of powdered sugar. Once all of the perogies were made, we boiled them for about 3 minutes and then sauteed them until they were golden brown on all sides.
The process of making perogies is pretty straight forward, but it is one that you would want to do with other people to help make progress more efficiently. I really enjoyed making these with my family. It gave us some time to talk and catch up, while making delicious food.
I would like to experiment more with the dough and the fillings before I make a more in-depth post about perogies. You can consider this just an intro to the possibilities of perogies.
