Crunchwraps
Let’s talk crunchwrap! If you are familiar with Moe’s or Taco Bell, they both have a crunchwrap type item on the menu (I’m sure a million places do). A crunchwrap is like a quesadilla/taco hybrid. Jacob and I love these so I wanted to try making them at home!
I started by preparing all of my ingredients. I washed and shredded lettuce. I diced tomatoes, diced fresh jalapeno, diced pickled jalapeno. I prepared cilantro and green onion (can use red onion or sweet onion). I rinsed and drained black beans. I prepared a “taco” meat--this one was an already prepared vegan meat substitute so I just had to warm it in the microwave. I had some shredded red cabbage in the fridge so I put that in mine. I grabbed out the salsa and I prepared a vegan nacho cheese. The nacho cheese that I used could be found in the Vegan for Everybody cookbook by America’s Test Kitchen.
Once everything was prepared, I laid my flour tortilla flat and filled the center with everything that I wanted to have in it (aka, every single one of the toppings). Be careful not to fill it too full because it will be difficult to close. After all of the toppings, cheese, and any extras were in the shell, I added the crispy corn tortilla to the top. I slowly and carefully worked on closing the flour shell over the corn tortilla. I heated about a tablespoon of oil in a nonstick skillet over medium/medium high heat and put my wrap in the pan with the folded side touching the pan. I let that cook for about a minute or two. Once it was golden brown, I flipped it over and cooked the other side for about a minute or two until it was also golden brown. Cooking the seam side first is very important because it helps to seal it in place!
I loved making these at home! I thought it was awesome to have fast-food style food at home without compromising the taste and improving the quality. This is also a food that is so customizable that you can add or not add anything that you want! I would recommend trying this!
Taste: 10/10!
Notes for next time: I loved that these were made meatless and not with dairy without compromising taste!!
