Whipped Cashew Dip with Sun-Dried Tomatoes and Rosemary (Recipe #161)
Earlier this year, I made a whipped cashew dip with olives. That main recipe had two other variations in the Vegan for Everybody cookbook. One of the variations called for using sun-dried tomatoes and rosemary. This version was delicious!
I really enjoyed this version of the whipped cashew dip. I liked how creamy it was and how much flavor came through. I thought the combination of rosemary and sun-dried tomatoes was a really good idea! I served this dip with carrots, cucumbers, and crackers. This dip would be great with any veggies or bread. I think this kind of spread takes a break from a traditional dip like hummus to showcase different flavors. I am sure this combination of flavors would be great in hummus, but I also think that this is a great use of raw cashews.
