Parsnip Hummus (Recipe #156)
Not that long ago, I followed the recipe for sweet potato hummus. In the Vegan for Everybody cookbook, there was a variation for the sweet potato hummus that used parsnips instead. I decided to give that a try! I told my husband that I thought it would be a fun idea to make a bunch of dips for lunch over the weekend and have it with veggies and crackers.
The parsnip hummus was good! I do like the sweet potato hummus better because it is slightly sweeter. I feel that you can tell that the hummus was made with parsnips (not a bad thing, you would just need to like parsnips). I find parsnips to be the mix between a carrot and a turnip. I liked the texture of the hummus. I loved adding the oil and sesame seeds to the top. This time I decided to add both sesame seeds and black sesame seeds.
I think this is worth giving it a try because it shows you a different way to incorporate more vegetables into your diet. I think hummus/spreads are a great thing to have on hand because when you want a quick snack then you can easily grab hummus with veggies or crackers.

Notes for next time: I did add more garlic than the recipe called for and it was a good call (if you like garlic, of course).
