Molasses Spice Cookies (From The Complete Cooking for Two Cookbook by America’s Test Kitchen)
The holiday season is here and in full swing, so that means that it is time to post about cookies! I made a list before starting the cookie process of what I wanted to make and I could have kept writing forever. I just want to bake and make candy all day! I figured the perfect cookie to start this holiday season is a molasses spice cookie. I chose this cookie because Jacob really wanted to have some and it just felt like it belonged on a Christmas cookie tray!
I found this recipe in The Complete for Two Cookbook. I decided to double the recipe, so I could give some away. The recipe was very easy! It called for flour, cinnamon, ginger, baking soda, cloves (I omitted the cloves), ground pepper, salt, sugar, dark brown sugar, butter, molasses, egg yolk, and vanilla. I mixed together the flour and spices in one bowl. In another bowl, I mixed the rest together and combined the liquid into the dry ingredients. I shaped them into balls, rolled them in sugar, and flattened them onto a cookie sheet.
I was a little worried when I saw the list of spices and the fact that it included pepper. However, the cookies turned out amazing. They were soft, and chewy, but held their shape. I would recommend this recipe! The best part is that if you wanted to make it for two people the recipe is perfectly scaled down to one dozen cookies. These cookies also smell amazing and filled up my kitchen with the sweetest smell!
