Lentil and Mushroom Burgers AND Quick Sweet-and-Spicy Pickled Red Onions (Recipe #149, #150)
I had my hopes very high when I was preparing the lentil and mushroom burgers. The black bean burgers were just so good and I did not want to be disappointed. This recipe for lentil and mushroom burgers created a delicious veggie burger. The burger had a lot of flavor, had a great texture, and it held together nicely.
This burger was made from brown lentils, bulgar, and raw cashews. This burger also had sauteed mushroom, celery, onion, garlic, and leek (I did omit the leek because I did not have one on hand). Basically, everything was cooked then thrown together in the food processor with aquafaba. I put the mixture into a large bowl after the food processor and stirred in bread crumb and salt. I formed 12 patties and started frying them in a non-stick skillet until both sides were golden brown. These burgers were delicious, but they were time consuming. After cooking the grains and the vegetables, the recipe states to let all of it cool for about a half hour.
I decided to put these burgers on toasted buns with horseradish mayo, guacamole, tomato, and pickled red onions. The pickled red onions were a recipe also from the Vegan for Everybody cookbook. I enjoyed the pickled red onions. The onions had some sweetness to them and a little bit of spice. The onions had a nice texture like they began to soften, but there was a bit of crunch to them. I would make these again for a burger or sandwich topping. I think all of the toppings added flair to this already delicious burger. I loved (I mean loved) the idea of the horseradish mayo. It was creamy, but spicy and delicious. Overall, I would make this delicious burger again and top it with pickled reds and a flavorful mayo!
