Easy Apple Galette
America’s Test Kitchen has multiple cookbooks. As I am sure you know, I have been cooking through the Vegan for Everybody cookbook. I also happen to have their Complete Cooking for Two Cookbook. I stumbled across this recipe after looking for more things to do with the apples that I had. Their recipe for an apple galette was so easy and delicious!
This recipe called for ½ puff pastry, 1 large apple that was peeled, cored, halved, and sliced thin, butter, sugar, apple jelly and water. Basically, placed the apple slices on the puff pastry that was sitting on top of a parchment lined baking sheet. I rolled over the edge of the puff pastry just slightly. I sprinkled the top with sugar and dotted it with butter. After that was baked in the oven, I added a glaze made from the jelly and water to the top of the galette!
This was a super easy, delicious, and quick recipe to throw together for two people. I can even see doubling this recipe to use a full sheet of puff pastry for a few guests! I loved the simplicity of this!
