Dukka (Recipe #162)

According to the Vegan for Everybody cookbook, Dukka is an Egyptian style condiment/spice blend that has multiple purposes. The cookbook explains how it can be used with proteins, vegetables, or with bread and oil.

This dukka is made with roasted chickpeas, pistachios, black sesame seeds, cumin seeds, coriander seeds, fennel seeds, salt, and pepper. Basically, I processed the ingredients in stages in the food processor and then I combined all of it together in a bowl. I decided to take a scoop of the dukka and add it to a couple tablespoons of olive oil. I served this with toasted bread and soft bread. I liked this as a dipping oil best with soft bread. I think it would be a great spread for toasted bread when the ratio of oil to dukka is closer to 1 to 1. The dipping oil was very flavorful!
