Crispy Spiced Chickpeas (Recipe #160)
Over the weekend, I decided to make a lunch full of dips and appetizers. One of the dishes that I chose to pair with it was the crispy spiced chickpeas in the Vegan for Everybody cookbook. This was a very simple recipe!
I drained chickpeas, rinsed them, and placed them on a paper towel lined plate. I let them drain while I prepared the spice blend. In a medium bowl, I mixed together paprika, sugar, salt, and pepper. I also grabbed out another dish and lined it with paper towels. I patted dry the chickpeas to prepare them for frying (this is important to get crispy chickpeas). I heated oil in a skillet and placed in the chickpeas when it was hot enough. I let them remain in the oil for about 12-15 minutes stirring occasionally. Once they turned golden brown, I removed them from the oil and placed them on the paper towel lined plate for just a moment. Then, I transferred them into the bowl with the spice mix. I wanted the spice mix to evenly coat the chickpeas.
I liked the blend of sugar and paprika. I would be interested in trying other blends (maybe a garlic and herb version?). These chickpeas can serve as a snack or as croutons to add some crunch to a salad.

Notes for next time: Fry them in a large enough pan with enough oil or do multiple batches to make sure they get crispy.
